Italian Chicken

Italian Chicken and Veggies

Ingredients 

  • 1  tsp  salt 
  • 1/2  tsp  pepper 
  • 2  tsp  basil 
  • 2  tsp  rosemary 
  • 2  tsp  thyme 
  • 1  ts p paprika 
  • 3-6 of cloves garlic pressed (depending on how much you love garlic!)
  • 1 1/2  cup  broccoli florets 
  • 1  small red onion,  chopped 
  • 1  medium zucchini,  chopped 
  • 2  tsp  garlic, minced 
  • 2  Tbs  olive oil 
  • 2-3 chicken breasts 
  • Side rice of choice,  optional 

Instructions 

  • Cut chicken into bite sized cubes, place in sealable plastic bag.  Press 3-4 garlic cloves into bag, add a pinch each of salt and pepper and a drizzle of olive oil, seal and mix.  Let chicken marinate, at least 30 mins, up to overnight.  
  • In a small bowl, mix salt, pepper, basil, rosemary, thyme, paprika, and remaining garlic. 
  • Place the chicken and veggies in the sheet pan. Sprinkle mixture evenly over the chicken and veggies. Drizzle with the olive oil. 
  • Bake at 400 degrees for 25 minutes until chicken is cooked, and veggies are soft.
