Italian Chicken
Ingredients
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp basil
- 2 tsp rosemary
- 2 tsp thyme
- 1 ts p paprika
- 3-6 of cloves garlic pressed (depending on how much you love garlic!)
- 1 1/2 cup broccoli florets
- 1 small red onion, chopped
- 1 medium zucchini, chopped
- 2 tsp garlic, minced
- 2 Tbs olive oil
- 2-3 chicken breasts
- Side rice of choice, optional
Instructions
- Cut chicken into bite sized cubes, place in sealable plastic bag. Press 3-4 garlic cloves into bag, add a pinch each of salt and pepper and a drizzle of olive oil, seal and mix. Let chicken marinate, at least 30 mins, up to overnight.
- In a small bowl, mix salt, pepper, basil, rosemary, thyme, paprika, and remaining garlic.
- Place the chicken and veggies in the sheet pan. Sprinkle mixture evenly over the chicken and veggies. Drizzle with the olive oil.
- Bake at 400 degrees for 25 minutes until chicken is cooked, and veggies are soft.
