Southwest Sweet Potato
Ingredients
- 1lb apple sausage, sliced on a bias
- 3 cups sweet potato cubes
- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- 11.5 oz corn kernels (if canned, drained)
- 1 red bell pepper sliced thin
Instructions
- In a mixing bowl, toss the sweet potato cubes in the olive oil and chili powder.
- Spread sweet potatoes on one half of your sheet pan, apple sausage on the other, and divide with corn. Drizzle with olive oil.
- Bake at 400 degrees for 20 minutes.
- Serve with bell pepper slices on top.
