Ginger Pork

Ginger glazed pork with roasted asparagus, snap peas, and carrots

Ingredients

  • Stir Fry
    • 2 tablespoons olive oil divided
    • 2 tablespoons ginger finely grated
    • 2 cloves garlic minced
    • 5 cups vegetables carrots, peas & asparagus pictured
    • 4 medium to thick cut boneless pork chops
  • Sauce
    • ¼ cup soy sauce
    • 5 tablespoons maple syrup (or sweetener of choice)
    • 1 teaspoon sesame oil
    • 1/4-1/2 teaspoon red pepper flakes to taste

Instructions

  1. Marinate pork in sauce in resealable bag 1 hour up to overnight.
  2. On your sheet pan, drizzle olive oil over vegetables, add garlic and ginger and hand toss to mix.  
  3. Add pork to the pan, drizzle sauce over veggies
  4. Bake at 400 for 20 minutes.
  5. Serve with your choice of rice.
