Steak Satay
Ingredients
- 1 cup smooth peanut butter
- 1/4 cup low-sodium soy sauce
- 2 teaspoons red pepper flakes
- tablespoons dark brown sugar (or sweetener of choice)
- Juice of 2 limes
- Flank steak
- 3 cups broccoli
- 1 pack ramen noodles, seasoning packet discarded
- 1/4 cup sweet chili sauce
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 cup green onions, sliced
Instructions
- Mix peanut butter, soy sauce, red pepper flakes, sweetener, and lime juice in a mixing bowl until well combined. Add soy sauce by the tablespoon as needed to make mix more fluid.
- Marinate flank steak with peanut butter sauce in sealed bag for 1 hour, up to overnight.
- Place flank steak on sheet pan, with broccoli surrounding it. Season with salt and pepper.
- Bake at 400 for 15-20 minutes, until steak is just pink in the middle.
- Cook ramen noodles per package directions. Drain.
- Combine the sweet chili sauce, soy sauce, and brown sugar in a bowl.
- Add noodles to bowl and toss until well coated.
- Cut steak into thin cubes, serve with broccoli and noodles topped with sliced green onions.
