Southwest Sweet Potato

Apple chicken sausage with southwest sweet potato hash 

Ingredients

  • 1lb apple sausage, sliced on a bias 
  • 3 cups sweet potato cubes 
  • 1 tablespoon olive oil 
  • 1/2 teaspoon chili powder 
  • 11.5 oz corn kernels (if canned, drained) 
  • 1 red bell pepper sliced thin 

Instructions

  •  In a mixing bowl, toss the sweet potato cubes in the olive oil and chili powder.   
  • Spread sweet potatoes on one half of your sheet pan, apple sausage on the other, and divide with corn.  Drizzle with olive oil. 
  • Bake at 400 degrees for 20 minutes. 
  • Serve with bell pepper slices on top.
