I have absolutely no authority to suggest what you eat – I’m not a doctor or a nutritionist, and I never went to culinary school.  I just love food! And I want to share some of the things I’ve found along the way that have been successful with my family and friends.  I first started Paleo in spring of 2014, and I was “hardcore” about it for a solid 6 months, and I honestly can say it was the best I’ve ever felt.  I’ve been on and off of it since then, and I like to say I’m Paleo-ish now. I follow the basic guidelines, but I’ve made a few allowances for myself to stay sane and happy – I’m also a firm supporter of “Anything in Moderation”!  (We can cover some of my allowances some other time: including alcohol and dairy). 

So… my “specialty,” of sorts, is meal prep.  I’ve been meal prepping for my husband (henceforth known as B) for maybe a year now.  I typically do the grocery shopping, and when he would add “frozen lunches” to the list – AND I WOULD BUY THEM! – I starting getting queasy thinking about the amount of preservatives and sodium that he was signing up to eat.  So, I started making him one big meal that he could portion out for the week – some kind of chicken and rice option, like paella or chicken and broccoli.  Meanwhile, I would just take a salad for myself.  The first week of January 2019, I saw a video post on Buzzfeed doing a meal prep with sheet pan meals and they looked really good, so I figured I’d try it for the two of us.  B wanted to know why I was doing it, because he was perfectly happy with the chicken and rice I was making him and didn’t want me doing any more work for him. [Side note, B is a perfectly capable grown ass adult man that is totally willing and able to make or take his own damn lunches, I just like making food, okay?!?!]  I told B that I wasn’t going to be doing it every week, so he shouldn’t get his hopes up. Joke’s on me, though, because I actually REALLY love doing it, and have been doing it every week since. I am now making lunches for me, B, and my friend at work.  

Fast forward to my sister asking if I wanted to do a food blog with her.  Total “HELL YEAH” moment, but I have to be honest – I suck at the narration part.  That’s a really important part of blogging. I’m good with the cooking, I’m okay with the photos, but I’m an utter fail at giving details. I’m a very blunt, direct, and private person – my godmother always said I’d be great to work with the CIA due to the secrecy I tend to project and the walls I erect with other people.  I associate blogging with journaling – and I haven’t journaled since my mom suggested it when I was 12. 

But…… here we go, lets give it a try, shall we?
