BBQ Chicken

BBQ chicken and sweet potato “fries”

Ingredients

  • 2-4 boneless, skinless chicken breasts
  • 1 cup barbeque sauce of choice
  • 2-4 sweet potatoes, peeled and cut into long strips
  • Olive oil
  • 2 tbsp garlic salt
  • 2 tbsp onion powder
  • 1 tbsp paprika

Instructions

  1. Marinate chicken in barbeque sauce.
  2. In a large bowl, toss sweet potatoes with just enough oil to coat. Sprinkle with garlic salt, onion powder, and paprika.  Hand toss to coat. 
  3. Spread sweet potatoes in single layer on prepared baking sheet.  Place chicken breasts on adjacent side.  Bake at 400 degrees for 20 minutes.  
  4. Drizzle chicken with extra barbeque sauce.
